Abstract: Near-infrared spectroscopy(NIRS),mid-infrared spectroscopy(MIRS)and Raman spectroscopy(Raman)technology can be used for non-destructive analysis of samples,they have shown great potential for application field of oil analysis in recent years. This article reviewed NIRS,MIRS and the Raman technique application in oil analysis,mainly on oil fatty acid composition analysis,identification of adulteration of edible oil,free fatty acid analysis,fatty acid cis-trans structure and non-saturation analysis,etc. The further applications and development of NIRS,MIRS and the Raman technique in oil analysis were also predicted.
