Abstract: The technology for extraction of glutelin from corn gluten meal was optimized by mono-factor experiment and response surface method.The optimum technological conditions were: ratio of solid to liquid 1∶14,extraction time 113 min,mass fraction of NaOH(0.6%) and extraction temperature 54℃.Under these conditions,the yield of glutelin reached 50.79% and the purity was up to 86.57%.
